Step by Step Instructions on How to Grow Potatoes
When to plant potatoes: 0-2 weeks after the last spring frost.
Prepare the soil: Soil should be a mixture of soil and compost and hoed or raked until it is loose and crumbly.
Prepare the potatoes: Before planting potatoes you need to make sure that there are eyes growing on the tubers. You may need to chit the tubers by putting them somewhere in a light, cool frost free place 50F (10C) with eyes upright until the eyes sprout.

Potato Planting Instructions
Potatoes should be cut in fourths (small potatoes can be planted whole) with at least 2 eyes on each piece. This should be done 1-2 days before planting so that they have time to form a protective layer which will retain moisture and makes the potatoes less susceptible to rotting.
Plant potatoes one foot apart.
Put the seeded tubers beneath 3 to 4 inches of soil with the eye side up.
Water potatoes regularly in the morning or late afternoon just before the sun goes down.
Hill the potatoes after they are 6 inches tall:
Hilling should be done before the potato plants bloom, when the plant is about 6 inches tall. Hoe the dirt up around the base of the plant in order to cover the root as well as to support the plant. Bury them in loose soil. The idea is to keep the potato from getting sunburned, in which case they turn green and will taste bitter. You will need to hill potatoes every couple of weeks to protect your crop (1).

How to Tell When Potato Plants are ready to harvest
When the potato plant dies off your potatoes are ready to harvest. You can check to make sure they are ready by rubbing the skin of the potato with your fingers. If the skin comes off easily it means your potatoes are not ready to harvest. Potato skins will be hard to rub off when they are ready to harvest.
