If you want to plant some of the corn you grow you will need to dry it properly or else, your seeds will not grow. Save seeds from different corn plants to prevent inbreeding depression (causes stalks to be short and does not produce many ears).
Before harvesting your corn to eat, can, or freeze you should decide which corn stalks you plan to use for seeds. When harvesting leave the corn ears you plan to use for seed on the stalk. It usually takes 1 to 2 months after your regular harvest before seed corn is ready to be harvested.

How to Dry Corn-Step by Step Instructions
When seed corn ear husks are dry and turn brown they should be harvested on the very next dry day before the first frost.
Pull back the husk of each ear to expose the kernels.
Braid the husks of 3 or 4 ears together in a bunch (Repeat this procedure until all of your seed corn ears are bunched).
Air dry your corn bunches by hanging bunched seed corn in a room where the air is dry and warm (not hot). This process will prevent mold growth on your seeds.
Check the dried ears periodically for off color kernels (this could mean you have bad or cross pollinated corn). If you find off color kernels you should remove them and throw them away. If one ear has alot of them it is best to remove it from the bunch and dispose of it. It takes approx. 3 months for the corn to dry and be ready to be shelled. Kernels will appear dry and very wrinkled.
Once the corn is completely dried you should shell the kernels by holding the ear over a large bowl with one hand while twisting off the ear's kernels with your other hand. Keep twisting until all kernels are removed from the ear.
Put the dried kernels in a rodent proof container such as a large glass jar or metal canister.
Store the container in a dry, cool place until planting time (1). See our featured video below.
