"It has been found that celery loses very little of its nutrients when steamed. In a study published in 2011, scientists examined the loss of total phenolic antioxidant nutrients from celery when blanched (for 3 mins), steamed (for 10 mins) and boiled (for 10 mins). Whilst boiling and blanching resulted in significant antioxidant losses of 38-41%, celery that was steamed retained 83-99% of antioxidants". (Nordqvist, 2016).
